100% Delaware from Yamagata prefecture.
Harvested in three stages. Early picked grapes for destemming and skin fermentation for 4 days, followed by 15% whole bunch skin fermentation for 8 days ,then finally the ripest grapes for 13% whole bunch skin fermentation for 9 days in amphora .
Aged in 70% stainless steel vat, 30% amphora.Blended 3 cuvees in March 2021.
