Apple Republic 2018

"Apple Republic cider is made from a selection of locally grown Yamagata apples,
included the indigenous Syu-yo variety, well known for its vibrant acidity.
All the varieties are co fermented and cool termperatures and bottled prior to completion
of the primary fermentation resulting in a lightly petillant cider with fresh apple aromas."

山形で育種された酸味の高い秋陽種を中心に河北町にて栽培されるリンゴを５種類使用。
丁寧に選果を行いながら手作業にて圧搾。
豊かな質感を残すため発酵前の澱引きは行わず、澱の撹拌を行いながら低温での発酵。
